What's cookin', good lookin'?

Truthfully, there is not much cooking in this post. This is a Feta Cheese dip that is simply delicious. The ingredients are mostly "to taste". For example, I have not made it since I discovered Greek yogurt, so I will definitely be forgoing the Dannon on the next go-round. However, I think 32 oz of Greek yogurt would be too rich, so I will probably do 16 oz of that ingredient the next time I make it. Or maybe, I will do 16 oz and throw in a few more spoonfuls until the consistency is just right. Or, maybe I will not have a cucumber that day and will decide to leave it out. Or, perhaps I will add my Tastefully Simple Garlic Garlic seasoning mix knock off instead of the onion and garlic it originally calls for. And it could be that I will not have any pita and instead will just eat it by the spoonful, directly from the bowl. I mean, not that I would ever do that.

And yes, this is why I am SO not a baker.

Feta Cheese Dip
1 pkg feta cheese
1 small container cottage cheese
1 32oz container plain yogurt
half yellow onion, minced
1 small cucumber, diced fine
garlic, to taste
oregano, to taste

Mix ingredients together, serve with pita bread or pita chips.


Kelli's Garlicky Goodness  Seasoning Mix
1 1/2 cup dried minced garlic
1/2 cup dried minced onion
1/2 tsp salt
2 tsp dried parsley
2 tsp dried chives

Keep stored in a glass jar with a tight lid. This seasoning can be added to just about everything. When adding to dips, let sit for a few hours to let the flavors mix and to allow the dried spices to soften up a bit.

Damn. Wish I knew about that dip on Saturday. Sounds delish! I'll try it next time.

Oh boy, I have a Costco sized container of Feta in my fridge...yummo!
