What's cookin', good lookin'?

Today is "recipe Monday" per the Schedule. I am feeling quite lazy, so it would be appropriate that I do a Lazy Recipe. This is a basic chicken salad recipe but I LOVE IT. During the summer, we ate it almost every Wednesday - that is the day that Tamara comes over to babysit for a few hours from 4:30 to 6:30. This means, that we get home at 6:30 and are scrambling to make dinner. Chicken salad, it is.


Avocado Chicken Salad

Ingredients
1 pound skinless, boneless chicken breast halves - boiled and chopped fine.
1/2 cup raisins
1 cup thinly sliced celery
3/4 cup seedless grapes, quartered
1/2 cup pecans, chopped
1 cup light mayonnaise
1 avocado - peeled, pitted and diced
1 tart apple - peeled, cored and chopped
1 teaspoon fresh lemon juice

Preparation
In a large bowl toss together the chicken, raisins, celery, grapes, pecans. Mix in the mayonnaise. Fold in the lemon juice, avocado and the apple. Chill.

Note: This can be made a few hours ahead of time -- simply hold off on the lemon juice, apple and avocado just before serving.
